After nearly 100 cocktail grazes, here’s what I know about portioning that most guides won’t tell you:

1. Most portioning guides are way off.
They’re written for sit-down dining or buffets, not cocktail style. When food is grazing-format, people eat differently. They pick, they pause, they socialise. They are not usually loading up a plate.

2. Grazing Does NOT = Dinner. 🍝
Your guests are standing, drinking, and chatting, not sitting down to a three-course meal. Portion expectations need to reflect that. You need less than you think.

3. Event length matters more than guest count.
A 2-hour event and a 4-hour event with the same number of guests are completely different briefs. Quantities don’t just double, the whole rhythm of eating changes the longer an event runs. The time of day it starts changes things even further.
